This little pita filled with joy and delicious goodness called Sabikh is one of my favorite things to eat in Israel. They take a long time to make something that seems so small and simple but they put such passion in placing each layer of fried eggplant, hummous, assorted fresh and pickled veggies, and egg. As a result, the line is out the door, but trust me it is worth the wait. The best place to get it is off Allenby St. and Tcherinowsky St. in Tel Aviv for only 17 NIS.
